Gavia-Bormio 2000 wasn't exactly a success in 2004. Hence why I prefer the Stilfserjoch from Prad. But the combination you mentioned sounds promising as well. They've done the Stilfserjoch in 2020 & 2005 so the Stelvio descent is definitely doable.
