Ditch the carbon, get some Hed Ardennes, H+Son Archetypes or TB-14s or some Pacenti SL23s built up on Hope/King/Ultegra etc. hubs with competition spokes. If you're felling fancy source to old Nemesis tubular rims and use them.

Carbon clinchers make no sense to me. Have a decent wheelbuilder design and build a set specifically for you and your needs. Better hubs, better build, similar weight, probably $500 or more less.
HED, DT, Pacenti, H+Son, Velocity rims. DT, PMP, Record, shimano, WI, others, hubs. sapim Race and laser spokes...built well, of course.
