Not written as step-by-step instructions, but there is lots of good information on Sheldon Brown's pages to help cut through the BS. Seems it's still being updated even though the man himself passed away a few years ago.

Find a friendly LBS to hang out and watch the mechanics. Tell them you want to learn how to fix your own bike, bring some cake and coffees.

Buy some old scrap bikes to mess about on and to learn.
 
Don't discount Youtube either. For someone starting out or switching to unfamiliar parts it's a godsend, I wish it existed 15 years ago!

I also agree with Benotti, speak to the mechanics in your local shops, they are usually happy to help you out (bring beer or coffee just in case though). Also check to see if there are any bike maintenance classes in your area, some shops run these quite regularly.
