There's always football, and soon we'll have XC skiing, alpine skiing, biathlon. Sadly no NHL yet thanks to the lockout, but plenty of sports to keep me occupied. Anyway, the Tour Down Under is not that far away...

If I hadn't lost Universal Sports access the answer would be "Ski racing". Watching Bode Miller was a good fill-in for me in the winter. But w/o that channel anymore, IDK what the winter will hold!

When does XC and Biathlon start?

24th November in Gällivare is the start of the world cup in XC with the usual warm up race in Bruksvallarna one week earlier. Biathlon starts 25th in Östersund. Hopefully this winter will provide better conditions than last.
