In Italy there are some other stage races, but more "competitive" than Giro delle Dolomites.

This event just have a sort of uphill time trial on a single climb during each stage.

If you want to travel a bit further afield and can rope a mate in on it (it's run on 2-man teams), there's the four-day Tour of Israel, though the 2011 edition was cancelled due to insufficient funds. 2010's edition was won, unsurprisingly, by the pro duo of Niv Libner (Amore e Vita) and Ran Margaliot (currently a stagiare for Saxo Bank).

It also doesn't look to be anything like as difficult as the fantasy Tour of Israel that I was formulating in the Great Unknown Climbs thread.

There are many. More on the Mtn bike side then the road side. Here are a few of the better road focused stage races.

I can add

Trentino Tour (starts tomorrow)
Giro del Friuli (just finished)
Giro del Veneto (just finished, not worth honestly)

And in Spain I saw on a magazine a 2-3 days event, Vuelta a Murcia in March; I saw the stage routes and look quiet interesting.
