It's a bit sad afterwards..
- Vinokourov's attacks in the Tour de France 2007.
- Ricco & Piepoli in Giro d'Italia
But then again I enjoyed it the time as I was young, naive and enthusiastic.
Cancellara's attack the last kilometre in TdF is a nice unstained memory.
What I enjoy most is those stages or races which unfolds during the race: breaks that get away, sidewind adn weather, attacks on climbs where it is all or nothing, the crashes (not the physical consequences of them though, think more Paris-Roubaix) and mechanical failures.
220km, sun and no winds, flat, wide roads that ends in a bunch sprint: predictable and you can keep it..

Oh, and womens race in Athens (Olympics).

Coming down is fun too.
