Seat height adjustment for climbing stages

To settle a "bet", please comment knowledgeably on the following:

"It’s fairly common for profession cycle racers to adjust the saddle-height to a lower position on a stage with a lot of climbing"

Ivan Basso for one had a seatpost he could adjust on the fly for exactly this purpose. Flat portions high and forward, climbing low and back.
