Get a true touring bike, not a cross bike. Loaded? Front and rear racks?

Just buy a surly long haul trucker frame and build it up to your specs. Pretty hard to go past a steel frame for long haul touring. You could buy it as a complete bike as well. Available with either 26 inch or 700c wheels, the choice of which might depend on how hardcore some of the roads you were looking at were.
