Roasted Mexican salsa. I'm taking all the credit as I made it up when Mrs F was out on a Jolly. For one serving:
Dry frying pan, medium heat, add:
A tomato
A hot chile of your choice
2 garlic cloves, skin on
A small onion , quartered
Roast away until everything is soft and nicely burned (the tomato and onion will take longer than the garlic and chile).
When done, skin the garlic, chop the the stem off the chile. Add everything to a pestle and do your thing. Add some salt and pepp and lime juice and coriander and just fantastic over refried beans and cheddar in a wrap
