Living at altitude

I've been living in Mexico City for over a year now and riding only about 2-3 days a week, but with quality training and weights. I'm plenty acclimated, but wondering how living at altitude affects hematocrit levels. I know it will jump in the first few weeks when you arrive, but my question is, after a length of time, does the body adapt and return closer to the levels around sea level? I haven't had my blood drawn. It's just a curiosity question. Thanks for any answers.
