Has anyone got knowledge of cycling in Sicily? In particular the area around Trapani on the west coast. I'm wondering whether to take the road bike or mountain bike on my weeks holiday, any pointers for info, route guides, etc would be appreciated.

Take the road bike. Beware of the roads and the Sicilian drivers. Though there are some fairly good top amatuers and pros from Sicily, so there are people riding there.
