Presumably an abbreviation of Finlay, Fintan or (if his family has Cork connections) Finbarr, all of which essentially translate as fair haired. How true you consider that to be might vary considerably according to what photo you are looking at at the time, but easy to believe that it was fair when he was young.

Pollefliet is a variety of the Dutch name Polvliet or Polfliet. A "vliet" is a type of canal. A "pol" is a lump of grassy earth. I.e. a rather more boring etymology than "zealous pollen".
