If he was on a bad day he would have just followed the wheels and rode for a sprint.

Not so sure about that if he smelled blood. But as I said a hunger knock is the most likely explanation. But that kind of is a bad day though.
During the GTs there are plenty of stages to do nothing though, if you have a bad day in one of them it doesn't show.
Also it's hard to know what a bad day means given Pogacar is wildly above the rest and relative to his best shape, his bad days might still be enough to win given the right scenario.
