I guess stage 11 of the tour was a hunger knock, but still a bad day by this years standards, even loosing a sprint to Vingegaard.

It must have been the day he was threatened with a DQ for wearing an allegedly non-compliant suit.

If he was on a bad day he would have just followed the wheels and rode for a sprint.

Not so sure about that if he smelled blood. But as I said a hunger knock is the most likely explanation. But that kind of is a bad day though.
During the GTs there are plenty of stages to do nothing though, if you have a bad day in one of them it doesn't show.
Also it's hard to know what a bad day means given Pogacar is wildly above the rest and relative to his best shape, his bad days might still be enough to win given the right scenario.

No. Not everyone races for the same kinds of results nor do the have the same opportunity cost.
