7-Eleven was one of the few teams to see it coming. They went out the night before and bought up tons of ski gloves, and had hot tea waiting at the top.

Always cherished that photo for the total lack of kit coordination (due to the reasons you describe) and, as somebody whose feet regularly turn to ice in cold weather, I often wonder whether Andy's feet froze up seeing as they're about the only bit he didn't cover.

Something that you'd never see today. Come to think of it, they would probably neutralise a stage like that today too.

Quite so.
In this photo we're talking about 2004 Giro (you know the one and only one won by Cunego, with Popovyč, captain of Landbouwkrediet-Colnago finishing 5th).
This sort of "protest" (which is more like a cool marketing stunt) started in Le Tour 2003 with Saeco and the slogan "Legalize my Cannondale" because the Six13 could go below the UCI legal 6.8 kg limit.
In 2004 Giro, Saeco used these awesome striped jerseys to recall the ones used by prisoners.

Funny to think that, in 2011, the UCI rule is still there...

I don't know about his feet, but he said he looked down to check out his drivetrain, and saw that his legs were cherry red. He didn't look down again after that.
