Boonen vs. Cancellara is probably the closest thing to a genuine, long-term rivalry that we have had in recent years, although it was marred by many missed clashes due to injuries or crashes.

Froome vs. Wiggins was fun because of the intra-team bickering, but it really only lasted for about a year and a half--Vuelta 2011 to Giro 2013, after which nobody talked about Wiggins as a GT contender any longer.

Froome vs. Contador has potential, but they have rarely gone head-to-head at top form.

Kristoff vs. Degenkolb: even though they target many of the same races, we haven't really seen them race head to head, so it doesn't feel like a rivalry.

Kittel vs. Cavendish: as others have said, the problem here is that in a flat sprint, it is no longer any contest at all; their trajectories passed in such a way that we never had a period of interesting competition between them. The same could be said for Martin vs. Cancellara in time trials.
