Shredded Iceburg Lettuce mixed with Mayo. Toasted bun.
OK I had to use Romaine Lettuce but trust me Iceburg is the way to go.

Relish is 2 parts ketchup to 1 part sweet pickle relish.
And american process cheese. don't get fancy with the cheese the kind in the plastic slices work best.

Shrimp Scampi Burrito!
Oh this was just Shrimp Heaven. I was low on supplies and didn't want a bowl of just Shrimp. The tortilla was just perfect. Really a Shrimp delight.

Butter,Garlic,Parsley,Lemon Juice,Black Pepper

Barbacoa de Borrego (Pit Roasted Lamb)
Been meaning to stop here for about 3 years. Finally did on the way home from town this morning. So glad I did. Tacos are $1.25USD
The place was very clean. Only Open Fri-Sat-Sun. The Roasted Lamb sells for $15.00USD a lb.

I did a recipe when catering for BBQ Leg of Lamb. You marinate a butterflied boneless leg overnight in olive oil, garlic and mint. Place the leg opened fat side down on a hot grill, cover for 20 min. Turn over and cover for 20 min. Remove and let rest 15 min. slice and enjoy. It comes out moist and pink. It is always a big hit.

Focaccia Deluxe Edition
This is great with Minestrone or Pasta Fagioli (pasta fazool).
Serve with a Salad for a Summer lunch. Drizzle with Red Wine Vinaigrette add Buon Gusto Salami and Provolone Cheese for the best salami and cheese sandwich ever!
Also have done with Zucchini, Romano Cheese, Garlic and olive oil.

About 3 tbls. of oil rubbed around bottom of pan.
Generously brush dough with EV olive oil. A little chopped garlic, a little mozzarella, and a generous sprinkling of Romano Cheese.

The veggies need to be sliced very thin

Add bell pepper, onion, mushrooms (not too thin), salt, pepper, and a light drizzle of EV olive oil.
425 degree oven about 25 mins.
Best prepared ahead and served at room temperature.

ah, memories. when i was a little kid we used to get the 25 cent fish tacos from the street vendors in ensinada and cabo.

Not a street vendor but off the main road. Mostly locals. Best Fish Tacos ever. Still About $0.95 USD or $110 Pesos.

it was so good i cried a little.
