If I butter to the edge it melts before I can snap photo.

Let the good times roll

VELVEETA Fudge
total time
3 hr 20 min
prep
15 min
servings
48 servings, two squares each
what you need
3/4 lb. (12 oz.) VELVEETA® or VELVEETA Made With 2% Milk Reduced Fat Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
1 cup (2 sticks) butter or margarine
6 squares BAKER'S Unsweetened Chocolate
2 Tbsp. light corn syrup
2 pkg. (16 oz. each) powdered sugar (about 8 cups)
1-1/2 cups chopped PLANTERS Pecans
1 tsp. vanilla

Make It

PLACE VELVEETA, butter, chocolate and corn syrup in large microwaveable bowl. Microwave on HIGH 2 min.; stir. Microwave an additional minute; stir until well blended.

ADD chocolate mixture, in batches, to sugar in large bowl, beating with electric mixer on medium speed until well blended after each addition. Stir in pecans and vanilla.

POUR into greased 13x9-inch pan. Smooth top with spatula; cover. Refrigerate several hours or until firm before cutting into 1-inch squares to serve. (For longer storage, wrap tightly and freeze up to 2 months. Thaw in refrigerator overnight before serving.)

that does not look like the stuff that comes from cows (butter) but some brand of partially hydroginated vegitable oil (anything edible, soy / cotton seed, margarine) marketed as a "better than butter" spread. The ultra soft (balloon bread) toast collapses under the pressure of spreading creating a natural pool for the oil to collect. Spread to the edge and the containment area is compromised.

Tacos de Carnitas (spanish for "little meats"). Basically pork shoulder slow cooked in lard, then the heat turn up to crisp them on the outside. Heaven.

It's National Taco Day.

This a little fancier than what I usually make. I have prepared it this way and had excellent results.

Pork Carnitas

2 pounds boneless pork shoulder, cut into 1-inch pieces
4 garlic cloves, crushed
coarse salt and ground pepper
1 Tablespoon olive oil
1/2 cup fresh orange juice
1/2 cup milk
12 white corn tortillas, warmed
Fresh cilantro leaves, thinly sliced onion, diced avocado, green salsa and lime wedges for serving

In a large Dutch oven or heavy pot, combine pork, garlic and 8 cups water; season with salt and pepper. Cover and bring to a boil. Reduce to a simmer and cook covered for 45 minutes. Drain well.

In a large nonstick skillet (or the same Dutch oven) heat 1 Tablespoon olive oil over medium-high heat. Add pork, 1/2 cup fresh orange juice and 1/2 cup milk and cook, stirring occasionally, until liquid has evaporated and pork has browned, 8 to 12 minutes. The pork will start browning after liquid has evaporated. Season well with salt and pepper.

Serve carnitas in tortillas with cilantro, onion, avocado, green salsa and squeeze some lime juice over the meat.

I grew up in Alhambra/Monterey Park/San Gabriel area which has had a heavy Asian influx over the last 30 years. Noodle shops are all over. But no way would I pay $12 for a bowl of noodles.

Back in the late 60's I can remember driving up to Pasadena to Lucky Boys on Walnut. It was the place for a burger on what at the time was a giant burger. It is pretty typical now here in Southern California.

Mixed up some mayo, relish and catsup for hamburger sauce

Roommate doesn't care for chile. No problem made Pico de Gallo and just didn't mix it up. No problem.
