[Stage 5 will be an uphill sprint, even though mostly flat, so drop that.]
Stage 7, to Foligno, might be either a sprint (most likely) or a breakaway stage.
Stage 10 should be pan flat.
Stage 11 should be a sprint but with big chances for the breakaway.
Stage 13 will be flat.
Stage 17 will be flat but with a wall at 20 kms to the end.
So it's from 4 to 6 sprints in Italy.

You also didn't include Trieste, for some reason. All but guaranteed bunch sprint, that one.
The Irish road stages finish in (flat) cities. There are hills nearby, sure, but two (reduced?) bunch sprints is by far the most likely outcome, IMO. I expect at least 7 (reduced) bunch sprints, unless the spinters' teams are ridiculously weak (and Cav doesn't ride)
