I hate saying this but if you always have some kind of physical issue you're probably not built for GTs.
Nothing wrong with that.

Not if it was plain dumv luck with a crash. If he was getting 3 hours physiotherapy a day and did not lose time to the rest until today, I would say he is plenty tough enough

A GC rider is injured in a crash, and your reaction is he has must have a mental problem :D
I think think he might have high muscle/tendon tension or something which could make him a little more susceptible to injury, but that's it.

I think Pinot would've been so much better off in a big team.

Yes. Another rider falling in front of you makes one not a GT rider.
But it's not that someone crashes in front of you. It's that you crack because of it. Whether it's mentally or physically that he can't cope with crashes I don't know, but he's simply too fragile to content for three weeks.
