Watching the Sporza feed, can any Dutch-speakers explain why you adopted the English "Copenhagen"? The original name Köbenhavn = something like Kopen-haven in Dutch, so it would make sense to just use the Danish name. It's a haven/harbor city, not a city of hagen/hedges...

There's actually "no" logic behind it. The english translation comes from the german word for København which is Kopenhagen.

Edit: the danish word "København" comes from "købmændenes havn" which means merchants harbor in english.

That might be true. I'm no good at German, I just know where the name comes from
The name Kopenhagen might be of old origin though, as harbor perhaps have been spelled "hagen" in the middle ages in Germany.

For instance, in the middle ages the Danish word for harbor, havn, was spelled hafn (though by that logic, "hafen" seems more logical as the word in the middle ages as well).
