There is an arrogance in a rider thinking "Although this has come down to a sprint, I am confident enough that I am so far ahead that I don't need to sprint all the way to the line," and I am always happy to see such arrogance have this result.
But it’s just not cool to win a sprint sans arms aloft before the line, it doesn’t show panache and shouldn’t really count

There was no shortage of photos of Rory Townsend's celebration, for example, but he knew to keep going until he had passed the line. Anyone who values the photo over the win doesn't deserve the latter.
 
I thought the rider has to be accompanied with his bike to finish the race?

I suppose the rule is mostly so that a rider whose bike breaks just before the finish line won't leave it and start running.
The opposite; the bike getting across the line, but the rider doesn't, is... probably more rare. I don't think we're quite on that level of AI bikes yet; imagine if a rider crashes just before the finish and breaks their leg, and the bike just goes "SCREW YOU! I'm finishing."
