Sure, I am not implying he can't do that, but if you look at his Palmares he's actually a short stage specialist when it comes to wins. Only 5 of his 25 wins have been at a distance of 170km+.

But I guess it could also be an effect of mountain stages being horribly short all the time.

Evenepoel, like Pogacar, is not afraid of losing. They get criticized sometimes for 'dumb' racing, but people conveniently forget all the times they won by racing so aggressively.
