Pork in Red Chile
I just threw this together a couple of days ago. It made 8 little burritos and 2 helpings of Huevos Rancheros
The pork was frozen solid

Poured on some red chile sauce, garlic powder, onion powder, salt and pepper

Brought to a boil, covered and simmered 2 1/2 hrs. Cut it into chunks and simmered uncovered for 1/2 hr.

It was good especially the Huevos Rancheros. Which you rarely get with red sauce

A little something to start the day.

Chicken Breast, Bell Pepper, Green Onion, Tomato, Serrano Chile

I would add the green onions later next time. Better yet added as a garnish.

I hate it when green onions get too mushy; they're best (most flavorful) fresh and crispy! Great recipes again Krebs.

My standard pre-ride/workout breakfast was a bean burrito with a little cheese. A lot of slow burning carbs

Saturday Night Dinner

Stuffed Bell Peppers

I like to cook them in my cast iron pot on a bed of Cabbage. I have also roasted Chicken this way.

Add 1/2 inch water to keep Cabbage from burning. Cover with Canned Diced Tomatoes. Cook 350 degree covered. uncover for 1/2 hour more.

Rib-eye, Fried Potatoes with Bell Pepper and Onion, Tomato, Onion, Basil Salad with Extra Virgin Olive Oil and Balsamic Vinegar.

Cholesterol is borderline:eek:
I have lost 35lbs in the last six months. Mainly due to not drinking and skipping cream and sugar in my coffee. I usually don't eat every thing you see on my plate. The dog also helps:rolleyes:
Most days it's only one main meal and snacking on fruits, veggies, and nuts.
I don't post the boring stuff:D

Thanks for your concern.

PS: My roommate is moving back and he doesn't eat red meat. So you will see more chicken:eek:

Made an omelet using up the leftover Steak and potatoes from last night.

Added a little Cheese

Mmmmm Kraft Singles. It's all I had day before marketing. You are correct Velveeta would be better:D

Why not make your own!?

There are a bunch or recipes out there for making your own "Velveeta" processed cheese food. All are a variation on this

"Line a 8x4x2 loaf pan with plastic wrap
Put 1/2 cup water, 3 tbls. milk, and 1/2 tsp. gelatin into blender
Blend until gelatin has dissolved
Add 1/2 lb. Cheddar cheese
Blend until blended
Pour into loaf pan
Repeat same procedure two more times
Cover with plastic wrap and chill overnight before unmolding
Makes 2 Lb."

Works good in any recipe where melting is the goal.... also any recipe with SPAM and / or Catsup is improved

When eating be careful to remove the plastic wrap as it is indistinguishable from the "cheese".

But really, there is no need to ever run out of "cheese"
