It would make sense if it was the final mountain stage, but Amador will have to work for Quintana and maybe Movistar will even send him on a suicide attack to put pressure on Tom. At this point of the Giro working to defend a podium spot doesn't make too much sense, it's not like he'll gain minutes on them.

Sunweb is clearly the weakest team for the mountains, it was a good chance to isolete and then atttack him

It's not only protecting their current position, it's preventing the favourite from strengthening his position. It's completely reasonable. They aren't fans watching for entertainment.
