So why should Evenepoel beat him easily if Evenepoel also supposedly can't do long mountains?Del Toro’s biggest weakness is long climbs, much like Remco in that manner. Hes very versatile and impressive due to his age, but long climbs are still his main weakness, particular long real mountains.

I'm pretty sure Evenepoel would have been equal or better than Vingegaard on those UAE climbs. Vingegaard is good when there's recovery involved, multiple climbs, hard stages. On the other hand, a test against Vingegaard would have been better to measure his climbing level for the TDF and avoid any potentially misleading impressions.
