Contador finished first in the 2010 Tour and the 2011 Giro. That physically happened. Therefor he was the winner of those races and therefor he got the 2010 Tour and 2011 Giro titles. He was stripped of those results, that didn't mean he didn't finish first. Titles are awarded and hence can be stripped
So, even if he has only 5 GT titles on his palmares, he won 7.

In reality, Contador never tested positive in the 2011 Giro, which means that, according to doping law, he was clean in that race. That didn't stop them from stripping him of this title.
Also, Contador was never found guilty of doping, he was found guilty of having a banned substance in his body.

You know who was awarded the 2011 Giro? Michele Scarponi, who had previously been convicted for involvement in Operacion Puerto.
You seem perfectly fine with the fact that a man who was found guilty of having a banned substance in his body gets stripped off a result in an event where he tested clean, while the title he got stripped off goes to a man who was found guilty of involvement in one of the biggest doping scandals in this century to date.

You know what helps doping? people who are totally oblivious to the fact testing clean doesn't mean there's no doping. There's zero proof either Scarponi or Schleck was clean in those races (Scarponi served a 2 year suspension before, Schlecks brother made payments to Fuentes before). Nothing is worse than a superjuiced guy proclaiming to be the cleanest rider on the planet.
