Personally, I wouldn't count an overall (certainly in something like the TDU) as a 'win' per se.

Its not as though you get the chance to cross the line with your arms in the air

No, it's a fact that riders usually celebrate when defending the yellow jersey. I'm not sure how you can argue against that. Unless you think Wiggins won this stage, for example.
